The Breville Commercial CSV700PSS1BUS1 HydroPro™ immersion circulator enables sous vide cooking in containers with a maximum of 12 gallons of water. Unlike a traditional sous vide machine, this wand can be inserted into various pots and pans. Its Toolbox™ function assists users with calculating cook time and temperature, ensuring moist and tender fish, chicken, steak, and vegetables. Built with a user-friendly color TFT touch display, the wand can be programmed to quickly recall and apply previously used recipes at the user's discretion. This immersion circulator has a polished stainless steel exterior for durability and reaches a maximum water temperature of 194 degrees Fahrenheit with its coil-less heating chamber. When that unit went out we knew we wanted to upgrade to something you would see in a professional kitchen. I did a lot of research and ended up here.
Most of our countertop appliances are Breville so it was not a huge leap but we had never used a Sous vide wand.
This is a substantial unit and comes with a fantastic storage tote. It heats fast and maintains the temp flawlessly. It has a timer feature which is fantastic, if you remember to start the timer. We even move to a large Sous vide water bath because this can handle circulate water so well.
We use this almost everyday and are astonished at the power and Bailey for such a small device. A must have for any kitchen.
Pre sets are nice for things you do regularly, makes it very quick and easy.
Overall I highly recommend this unit!

First batch: 2 eggs, automatic mode for eggs (fast). Eggs came out completely runny and the albumen was barely set.
Second batch: 15 eggs, automatic slow mode for eggs with “water bath.” Cook time was one hour at 167-degrees. Left in water for another half hour for good measure, then ice water bath in the fridge until the next day. Yolks were somehow both barely set AND starting to turn sulfurous green around the edges and the whites were too soft to use in anything (not hard enough to chop for a salad or use for deviled eggs).
I ran both experiments with an EVERIE container setup with neoprene wrap and silicone lid.
The circulation is great, it came to temp pretty quickly, and the temperatures (measured with a Thermapen) were spot-on. But the cooking menu might just not be where this device excels. I will probably start using manual mode instead. So, one star off and I’ll continue to experiment. Note that it is MUCH bigger in circumference than the Anova and the other Breville, so a silicone lid on your container is almost a must in order to have it clip in properly. I do love the giant clip - very sturdy. Still recommend but perhaps experiment with cheaper items first to see if it works for you. I assumed it would work perfectly for how expensive it was and was a bit annoyed with my first two cooks.

Thanks to a tip in an online forum, I learned years ago to start with hot tap water. The water doesn't touch the food, so all those admonitions about never cooking with hot water are invalid. Despite starting with hot water, however, the Anova still takes a while to get to temperature. This Breville Polyscience takes almost no time at all. The circulator is both quiet and effective, keeping a large bath at a consistent temperature for the duration of cooking. Although the Anova handles a large bath, the temperature varies more. Even my old PolyScience didn't perform this well.
That power, while impressive, is not the only feature that explains why this circulator costs so much. The onboard controls are amazing -- and amazingly simple. Thanks to the Sous Vide Toolbox, I no longer have to check online to confirm water bath temperatures and cooking times. And the Toobox goes beyond anything I thought possible or necessary. Using the touch screen, you can select the food type, cut type, food shape, thickness, initial temperature (fresh or frozen), desired final core temperature, pasteurization level, and additional tenderness time. If, say, you choose vegetables, you'll get prompts to select the kind of vegetable (for example, root for carrots) and onboard options specific to what you're cooking so you don't have to go through options that don't apply. My only quibble with these settings is that the time can be shockingly long unless you choose the fast mode that increases the temperature by 4 degrees F. For instance, without using the fast mode, my 1.5" filet mignon steaks took 3 hours instead of Anova's recommended 1.5 hours. You don't have to use the HydroPro's toolbox, however. You can set up your water bath manually or you can program your favorite settings in the circulator's memory for a quick start.
The mounting clamp is strong and, because it attaches with a flip clip, quickly adjustable. The touch screen is bright and easy-to-read, although I wish it were a little more responsive. I love that Breville/Polyscience has included a case, especially since I had to buy one separately for my Anova; the zippered case protects the circulator well with rigid ends and bottom, plus padding. Even though the included manual is much better than most literature included with appliances these days, novices may find it lacking. Still, the onboard settings go a long way toward making up for a lack of experience. Really, other than knowing how to seal food, you can let the circulator take over.
The HydroPro is advertised as a commercial immersion circulator, which means it is built to withstand frequent use. It certainly can handle water baths large enough to hold a brisket or multiple smaller packets. For home cooks who expect to use a sous-vide immersion circulator only a few times a year, this is overkill, but for those of us who use the method a lot, the HydroPro is a wonder.
