I will not attempt to smoke brisket without my dual probe Maverick Redi Chek!
The dual probes are perfect for monitoring packer cut smoked brisket. There are significant differences as the smoking of the flat and point sections progress. Having one probe in the point of the brisket and one in the flat helps produce brisket that is perfectly tender and still juicy. Low and slow brisket smoking takes up to 16 hours, so the portable receiver eases the monotony of smoker tending.The dual probes are perfect for monitoring packer cut smoked brisket.
